Lobster Neuburg

 
 

Fine

 

Coffee cream has 20% fat.
Whipping cream has 30% fat.
Heavy cream has 36% fat.

About 4 1/2 lb. lobster
1 qt. coffee cream
salt to taste
2 or 3 tbsp. sherry.

Make white sauce
using 1/8 lb. Butter
2 tbsp. Flour or more
Melt Butter add flour, then cold cream.
Cook over hot water until thick
adding sherry and cubed lobster.

Serve in shells with sprinkling of buttered bread crumbs.

Brown slightly before serving.

Will serve 12.

A double boiler is a saucepan with a shallow pan that fits inside. The bottom pan is filled with water. Delicate ingredients are cooked in the top pan.
